It all started with what to do with those "made in China" hot looking and tasting red peppers. With few ripening avocados around, a guacamole was whipped up.
Carrying over the Mexican and red peppers theme, I rolled some chicken breasts in breadcrumbs, red peppers and lime juice and baked them with two jardin courgettes. Not entirely Mexican, but the chicken sure had a nice hot kick to it. Happy Monday!
